For most people in America the entire reason to order a quesadilla is all the scrumptious melty cheese. But in parts of Mexico quesadillas do not rely heavily on cheese. The main ingredient might be something like beef, chicken, or pork. Are fajitas Mexican? Not entirely. Fajitas are Tex-Mex and so are chimichangas and nachos. It’s not to say they don’t taste good, but they are not traditionally Mexican. However, you can now find fajitas in Northern Mexico. These dishes originated in Texas, which was part of Mexico until the 19th century, so, historically, they do have Mexican roots.
Technically, the word “fajita” refers to the meat (for example, skirt steak) that’s sliced thin and grilled, then served with vegetables and tortillas on the side. But today, most people pile on all the fixings and meat on top of the tortillas, roll it up, and call it a fajita.

Fast forward to the 70s and 80s and Happy Hour came to mean drink and food specials….an American institution.
