Are fajitas Mexican? Not entirely. Fajitas are Tex-Mex and so are chimichangas and nachos. It’s not to say they don’t taste good, but they are not traditionally Mexican. However, you can now find fajitas in Northern Mexico. These dishes originated in Texas, which was part of Mexico until the 19th century, so, historically, they do have Mexican roots.
Technically, the word “fajita” refers to the meat (for example, skirt steak) that’s sliced thin and grilled, then served with vegetables and tortillas on the side. But today, most people pile on all the fixings and meat on top of the tortillas, roll it up, and call it a fajita.
